Buttermilk Chicken – A new Friday Night Favourite !

In a bid to change up our family meal times and inject some newness into our lives ,I went on the search for something tasty for all the family ! There are some fab food bloggers out there that I get great inspiration from , one being Karen over at Kenmare Foodie she has the most amazing recipes and very family friendly ! I saw her on her instastories cooking up a Friday take away recipe and decided that this had to go on our menu ! I obviously had to make some tweaks as my husband can no longer eat spicy food due to his Crohns , I adapt quite a few recipes for him as he can not eat peanuts , Apples or Rhubarb weirdly !

 

The kids devour this every time I make it and complain that I do not make enough , typical kids !!

 

Buttermilk Chicken 

 

Ingredients

  • 700g of chicken ( I use a mix of leg and thigh )

 

For the Marinade

1 teaspoon salt

1 teaspoon black pepper

1 & half teaspoon smoked Paprika

1/2 teaspoon cayenne

1 teaspoon ground dried herbs

2 cups buttermilk

For the Seasoned Flour

2 cups flour

1 & half teaspoon  smoked paprika

1/2 teaspoon cayenne

1/2 teaspoon garlic powder

Method

  1. Place chicken pieces in the marinade for at least 30 minutes – I leave for two hours and this makes the chicken very juicy and tender !
  2. Roll the chicken pieces in the seasoned flour , ensuring it is well covered but shake off the extra flour as it tends to burn otherwise .
  3. I cook mine in the oven or air fryer , you can deep fry also for a more take away feel ( I cook for 35-40 minutes BUT please ensure chicken is cooked through .. cause you know .. food poisoning ! )
  4. Serve with home made fries and coleslaw for that KFC feel 😉
